Duck egg frittata with halloumi, green pepper and spinach. Served on a chilli and garlic foccacini. A versatile egg dish that can be enjoyed any time of the day. Breakfast, brunch, lunch or dinner. This easy dish is an always winner.

Ingredients
1/2 green pepper - sliced
1 handful of spinach
1 pinch of salt - Himalayan
4 finely sliced and diced garlic bulbs - homegrown or organic
1 Small brown onion, finely sliced and diced - home grown or organic
2 Spring onions slice
3 duck eggs - locally sourced
Halloumi sliced
Olive oil
Cayenne chilli pepper
Salt
Momma J's all purpose seasoning.

Prep
WASH YOUR HANDS
Preheat the top oven / grill
Peel and slice garlic
Peel and slice onion
Slice halloumi
Slice green pepper
Method
Step 1.
Place the dried chilli pepper into the pan on a low-medium heat, pour in the oil and allow oil to infuse. Once the oil is hot add the onion and garlic. Fry for 1 minute.

Step 2 .
Add the peppers and halloumi into the pan and fry for approximately 2 minutes.

Step 3.
Wilt the spinach in a separate pan, season with salt & pepper and add to the oven proof dish ( minus the water )

Step 4.
Crack the eggs into a bowl and whisk with a pinch of salt and teaspoon of Momma J's all purpose seasoning. Pour the beaten eggs into the oven proof pan. Remove from the hob and place into preheated oven. cook for 10/15 minutes

Step 5.
Serve immediately. With freshly made foccacini or potato fritters.
