African Cuisine - Akple

When it comes to African cuisine, the foods are always simple yet full of flavor.Usually consisting of a sauce or stew and staple starchy food to bulk out the meal. This dish is one of my daughters all time favorites. When Pops is visiting, she will always request Akple - Otherwise known as turned cornmeal.


Authentic West-African Dish . Akple, Okra, Salmon and sauce

Ingredients for Akple

cornmeal

water - 1 litre

Ingredients for Fish

Wild Alaskan salmon

Lemon

Ginger

Garlic

All purpose

Mixed herbs

Ingredients for Sauce

Ingredients for the tomato sauce

Onion

2 Tins of chopped tomatoes - 400gs

Cayenne pepper - 1 level teaspoon

All purpose - half teaspoon

Garlic granules - half teaspoon

Basil, dried - sprinkle

Olive oil

Ginger

Method

Place the pan on the fire, add oil and heat

1. chop the onion add to pan, add dry seasoning and sweat.

2. Add tomotoes, stir and allow to simmer. cover and cook for 30 minutes.

3.Uncover, stir and taste - Add salt if needed.

1 Grater

Method -

Skin or scale the salmon -

wash with salt and lemon.

1 wooden spoon

1 saucepan

1 Chopping board

3 saucepans - 1 for Akple, 1 for tomato sauce, 1 for okra

Grater


water - 1 litre

method place the water to boil




Okra - water

Oven baked salmon -

Garlic granuels

Cayenne pepper

Lemon

ginger

all purpose

mixed herbs
